The Demeter 2015 Merlot – beauty and elegance. This is a fruit-forward style of Merlot, but with serious complexity below the surface. Boysenberry jam and fresh blueberries come through immediately in the nose. Then followed by caramel and creme brûlée as it evolves in the glass. An hour or two of decanting will bring out the best in this wine. Its soft tannins and full-bodied opulence make this a fantastic fireside sipper. One could argue this wine is best enjoyed on its own or perhaps with a simple cheese course. But it easily pairs with grilled meats — try lamb chops with thyme.
